INGREDIENTS:
Juice from 2 small or 1 very
large lemon, or 2 limes, or 2
Meyer lemons
1
tbsp. (15 ml) honey
1
tsp. (5 ml) powdered ginger, or
a 1” (3 cm) square piece of
fresh ginger finely-minced
1.5 cups (375 ml) chopped
tropical fruit, such as mango,
papaya, pineapple or banana
INSTRUCTIONS:

Juice the lemon or lime(s).

Mix the honey and ginger
into the juice.

Chop the fruits into small
chucks 1/2” (1 cm) in size,
then toss into dressing.

Chill until it’s time to
serve.
YIELD: 2-4 servings.
Note:
If using a banana or other
fruit that oxidizes quickly,
chop it first and then toss it
in the lemon or lime juice, then
remove and set it aside while
completing the recipe
preparation. |
